Most people don't actually know what potassium does, we just know that we need it.  According to the University of Maryland, "Potassium is crucial to heart function and plays a key role in skeletal and smooth muscle contraction, making it important for normal digestive and muscular function, too." 

Scientists also claim that if you include a lot of salt in your diet, it is especially important for you to get plenty of potassium.  Today, most Americans get less than 50 percent of the suggested 4,700 milligrams of potassium per day!
