What do birth control pills, bottled water, chewing gum, Chinese food, x-rays, and pesticides all have in common?  All of these (along with a massive list of other things) are all supposed contributors to causing cancer.  It seems like everywhere you turn these days, there is another thing that can cause cancer, but I, for one, am going to do what I can to fight back.

I have long been a sufferer of canker sores.  They can be one of the most miserable health problems to go through, making it tough to enjoy talking, eating, or chewing gum...

Many people probably wonder why we push a "juice-centered diet" over one full of just eating an abundance of fruits and veggies in their natural state.  Although we are in no way advocating giving up raw fruits and veggies completely, we do see many benefits behind drinking juice!

Mixin' it up...

I decided that I was going to start mixing things up a little bit with my juice.  I love most of the Biotta Juices by themselves, but I will admit that the Sauerkraut Juice, as amazingly healthy as it is, is a little tough for me to enjoy by itself.

I just couldn't give up on it though, not after looking at the loooooong list of health benefits that come from the juice.

That is why I decided to start mixing it with Biotta's Vegetable Juice Cocktail and Oh My Gosh!  It is so good!  Something that I was pretty sure would have just ended up bearable, at best, turned out to be one of my favorite drinks!  In fact, I've started enjoying it so much, I'm going right now to order my next case of sauerkraut juice from Biotta!

I encourage all of you to try to mix things up with the juice! Do some experimenting and you might end up making quite a discovery like I did!

More Evidence of Sauerkraut Juice's Cancer-Fighting Capabilities

It's a topic we've covered many times in this blog, but it's important enough to us that we want to make sure and give you every piece of information that comes up about the health benefits that come from drinking Biotta Juices.  Recently, a group of scientists found more evidence proving Sauerkraut Juice's ability to fight cancer cells in animals and may be as effective in humans as well.

According to the article, "The investigators found that fermenting cabbage produced a number of different compounds, known as isothiocyanates, which have been shown in test tube and animal studies to prevent the growth of cancer, especially in the breast, colon, lung and liver.

According to their experiment, the fermentation process breaks glucosinolate down into isothiocynates and other compounds that may fight cancer. Previous studies have found that isothiocyanates encourage precancerous cells in the digestive system to self-destruct, a process known as apoptosis."

"Our study implies that fermented cabbage can be a good source of plant-derived bioactive compounds such as breakdown products of glucosinolates," Dr. Eeva-Liisa Ryhanen, the study's lead author, told Reuters Health.

Sauerkraut Has a History!

As you look through this blog and across the Biotta website, you'll find many pages giving information about the health benefits of sauerkraut and its juice.  I found an interesting article online today that shows just how historic sauerkraut's health benefits stretch back.

Back in the late 18th Century, Captain James Cook was one of the most prominent explorers in the world.  He would take crews of men out to sea months at a time.  One thing that made him a successful captain was his emphasis on the crew's diet. Captain Cook stopped anywhere that he could find to buy fruits and vegetables for his crew because he knew that healthy eating would lead to more success at sea. He discovered that eating sauerkraut and drinking the juice could actually prevent scurvy!  

Now, although scurvy isn't much of a health concern today, it is interesting to see just how long people have known about the health benefits found in sauerkraut juice! Today, sauerkraut has been linked to helping prevent cancer, to building immunity, to helping in digestion.

Some people may wonder, "Why drink juice? Why not just eat the fruits and vegetables that I normally would be eating?"  Although there is nothing wrong with eating your mashed potatoes or steamed carrots, there are juicing benefits!

According to Rasham Nassar in her article 'Juice Appeal lets you eat your vegetables with a straw,' we have lost a great deal of nutrients in our food thanks to a poor diet and lack of exercise. I was no different than most kids growing up.  When my mom told me that I needed to eat my vegetables before I could leave the table, I scowled at her and forced them down... one by one.  At that point in my life, I could not see the benefits that could come from them.

What’s in a Label?

Do you ever get confused when you look at labels?  Juice labels, for instance, can sport many terms, including “fresh squeezed,” “from concentrate,” “100% pure,” “fresh frozen” and “not from concentrate.”  What do these labels tell you about the quality of the juice and exactly what you are buying?

The Food and Drug Administration offers these guidelines:

•    "100% Pure" or "100% Juice." This label guarantees that the product is 100 percent fruit juice, complete with all its nutrients. Only 100 percent juice can be labeled "juice."  If a bottle contains mixed juices, it can only be labeled "100 percent juice" if each of the juices added to the mixture is, itself, a 100 percent juice.**

•    "Cocktail," "Punch," "Drink," "Beverage," “Blend,” “Sparkler.”  If you see these labels, you know that the products are diluted, containing less than 100 percent juice. They often have added sweeteners. These products might contain as little as 10 percent or as much as 99 percent juice. The rest is water or added sweeteners. Check the label to find out how much juice such products contain. As with all labels, ingredients must be listed on the label in order of volume.**

•    "Fresh Squeezed Juice." This label means the juice has been squeezed from fresh fruit. It is not pasteurized and is usually located in the produce or dairy section of the grocery store. Be cautious about offering non-pasteurized juice to children, older adults or others with compromised immune systems.

•    "From Concentrate." This label tells you that water has been removed from whole juice to make concentrate; then water is added back to reconstitute to 100 percent juice or to diluted juice such as lemonade. When water is added back to the concentrate, the product is labeled "reconstituted" or "made from concentrate" and has the same nutrition profile as the original juice. "**

•    "Not From Concentrate." This juice has never been concentrated.

•    "Fresh Frozen." Juice with this label has been freshly squeezed, packaged and frozen without pasteurization or further processing. It is usually sold in plastic bottles in the frozen food section of the grocery store and is ready to drink after thawing.*

•    “Fortified.”  “Fruit juice is sometimes enhanced with nutrients intended to provide health benefits because juice is convenient, has good flavor, and is inherently associated with good health. Juices may be fortified with extra vitamins (such as vitamin C), minerals (such as calcium), cholesterol-lowering sterols, and, increasingly, omega-3 fatty acids. Such juices may be a good idea if they're fortified with nutrients you don't obtain enough of in your normal diet.”**

Some of the ingredient statements for Biotta juices read “100% fermented.”  We’ve received dozens of questions about what that means.  Is it a yeast fermentation?  Is it like the process used in alcohol production?    Do we add lactic acid to our juices?  Does lactic acid mean there is lactose in the juices?  Let’s look at one question at a time.

Q:  Is the fermentation of the juices a yeast fermentation?
A:  No.  Our juices are lacto fermented (explained below).  There is no yeast involved.

Q:  Is it like the process used in alcohol production?
A:  No.  Alcohol fermentation uses yeast during the production.  Biotta juices contain no yeast and no alcohol.

Q:  Do we add lactic acid to our juices?
A:  No, lactic acid is not added.  The fermentation creates natural lactic acid.

Q:  Does lactic acid mean there is lactose in the juices?
A:  No.  Lactic acid and lactose are different.  There is no lactose in our juices, so they are considered lactose-free and also vegan.+

What is Lactic Acid?
Lactofermentation converts sugars and starches found in the vegetables into lactic acid, which is a natural preservative.*  In Biotta juices, lactic acid is produced as part of a naturally spontaneous fermentation process.

Fortified/Functional Foods: Can You Have Too Much of a Good Thing?

Pasta with heart-healthy omega-3 fatty acids, normally found in fish.  Probiotics in salsa.  Soda with vitamins.  Ketchup with additives to aid in digestive wellness.  Even marshmallows infused with skin-boosting collagen.

Functional foods—also called fortified foods—refer to “designer foods or ones that have been modified to incorporate nutrients they wouldn’t normally contain for a specific health purpose.”* 

Consumer Reaction
These foods abound in our supermarkets and consumers are eating them up—literally.  In 2008, functional foods made up a $30.7 billion market, according to the research firm Packaged Facts.  And that number is predicted to grow by 40% over the next five years.**

When 1,000 consumers were surveyed by the International Food Information Council Foundation in late 2005, 83% of respondents said they were interested in learning more about foods that offer health benefits beyond basic nutrition.* 

Fortified Foods Are Not New
When was the first fortified food introduced?  In 1924, iodine was first added to salt in Michigan to help reduce the prevalence of goiter in that state.  Soon, the success of this measure led to voluntary iodization in the entire country.  And we’ve been buying milk fortified with vitamin D since the 1930s to prevent rickets. 

Are Fortified Foods Worth It?
But can you have too much of a good thing?  That’s the question that comes to the forefront when talking about fortified/functional foods.  Cynthia Sass, a spokeswoman for the American Diabetic Association, said, “The idea of a supplement or fortified food is to fill a gap, to bring a person up to the recommended intake.  If you’re already at the recommended intake, it’s not going to do anything for you.  It may work against you.”*  Exceeding recommended doses of vitamin C, for example, can cause diarrhea, upset stomach and kidney stones.
